With over 40+ different pizza & pasta places in and around the Vero area, how does one choose where to go? Pizza can be a very subjective and can bring out the best or worst of people when discussing which one is best. My personal favorite is a cracker thin, lightly baked crust that has a little crunch to it, ground up sausage, and fresh mushrooms is my go to. When I learned of a new, and very thin cauliflower crust at Vittorio’s, I was excited. I love pizza, but have a slight gluten intolerance that keeps me from eating it on a regular basis, so I was hoping this would allow me to enjoy it with out any gluten issues. I am happy to report that I can enjoy it with out any “gluten” side affects.
Vittorio’s has 3 locations, Oslo Road, US Hwy 1, and one in Sebastian. This article is going to focus on the US Hwy 1 location. It’s tucked in the corner next to where Hurricane’s was once located, and in front of the Post Office. Parking seems to be adequate in the strip mall, I’ve never had an issue finding a parking spot. As you enter the space, its decorated with dark wooden tables and a wall of what looks to be reclaimed or pallet wood panels on the right side wall. The sign above the kitchen is large and grabs your attention as does the “Big Ass” Fan on the ceiling. I took a seat in the dining room and waiting for my guests to arrive so we could get started on the food! This was a Restaurant Review Dining Experience and they got to enjoy the dishes below along with me as I was creating this article.
Now let’s dive right in and see what this place has to offer and what I had to eat!
This dish was a first for me and it was one of my favorites of the night. Made with spaghetti, olive oil, fresh tomatoes, basil and topped with shaved Parmesan cheese. The spaghetti was al dente and the sauce had a very fresh tomato flavor, yet was creamy in texture that it clung to the noodles very well, so you got lots of flavor in each bite.
Chicken breasts are sauteed in a white wine and lemon sauce, then topped with thinly sliced ham, provolone cheese, then baked to perfection! The chicken was moist and tender and the lemon sauce gave it a bright and tangy flavor. So simple, yet so delicious!
You can never go wrong with a classic dish like this! The sauce is the real star here and was thick, had a rich tomato flavor, and was packed with a ton of meat!
Lasagna noodles are layered with buffalo spiced chicken and a cheese blend, then rolled up, topped with an Alfredo sauce, baked then drizzled with more buffalo sauce. When Vittorio described the dish, we had a look of confusion on our faces because it’s not a combination of flavors that seem like they would work very well together. After our first bite, all our concerns were laid to rest. The Alfredo sauce was creamy and had a wonder Parmesan flavor. The buffalo sauce added just a little kick of flavor, not overwhelming at all.
The final dish of the evening was the Fresca Pizza with grilled chicken added on it. If you did not know you were eating a cauliflower crust pizza, I think you would have a hard time discerning the difference between a regular thin crust and this one. It’s baked till the crust is golden brown and crispy, so you still get that same satisfaction you would from a normal gluten style crust. It was amazing!
In Conclusion:
While classic Italian dishes dominate the menu, Vittorio always seems to come up with a few unique combinations that keep things interesting. They are also keeping up with the times and demand for gluten free by offering the cauliflower crust which is outstanding for someone like me that loves pizza but needs to avoid gluten. Everything was fresh and made from scratch as you order it, so I totally understand why this place has been here for many years and has a following of regular customers. If you have not had the pleasure of dining here yet, I highly recommend you give them a try, I know you won’t be disappointed!
