Mini Grilled Cheese Bread Bowl
Soup: Sauté 1 large chopped onion and 2 garlic cloves with grapeseed oil on med-low heat. Just till the onions are translucent. Stir in 2 tbsp gluten free all purpose flour. Add 3 cups of chicken stock, 3 1/2 cups #Pomi strained tomatoes, 1 tsp thyme, 1 1/2 tsp coconut sugar, 1 tbsp organic @smartbalance, 2 tbsp milk or half and half, salt and pepper to taste. Bring to a boil then turn the heat to low, cover and simmer for 30-45 minutes.

Ashley KennedyThe grilled cheese is from the center of the bread. After I removed the center I brushed the inside of the roll with smart balance and toasted it in a 375 oven for 5-8 minutes.
