Paleo Chocolate Crunchy Bar
Filling
- 3/4 cup chocolate hazelnut butter (homemade is best but Justin's brand is great too- it does have a small amount of sugar) or chocolate nut butter of choice
- 1 tablespoon Cacao Butter (you can sub grass fed butter, but it won't set up as hard)
- 1 tablespoon coconut oil
- 1 tablespoon coconut milk
- 1 tablespoon coconut sugar simple syrup
- 2 cups organic Non-GMO corn flakes cereal (sweetened with fruit juice or no sweetener) *for true paleo use coconut flour flakes cereal
Chocolate Coating
- 1/3 cup melted coconut oil (use refined if you don't want a coconut flavor)
- 1/8 cup cacao butter
- 1/4-1/3 cup coconut sugar simple syrup
- 1/3-1/2 cup cacao powder
- 1 1/2 teaspoon vanilla powder or extract
- Pinch of sea salt
Line a loaf or 8x8 pan with parchment paper.
Place flake cereal in a plastic bag and break up the flakes with the back of a spoon. Add the filling ingredients except for the corn flakes to a mixing bowl. Stir filling until it is completely combined. Fold in crushed corn flakes. Press filling evenly into the lined pan. Set in freezer while you make the chocolate coating. Melt the cacao butter and coconut oil. Stir in reminding ingredients. Whisk till smooth. Pour over the filling and place back in the freezer to completely set up. Remove and slice into bars or squares. Enjoy!
