Oatmeal Lace Cookies

Oatmeal Lace Cookies

  • 2 cups Old Fashioned Gluten Free Oats
  • 1/2 cups Better Batter Gluten Free Flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 2 cups coconut sugar
  • 1 cup Organic shortening
  • 2 Tbsp water
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/4 tsp cinnamon, optional
  • 1 cup raisins or dried fruit of choice
Preheat oven to 325 and prepare 2 cookie sheets with parchment paper. Mix shortening, coconut sugar, and water on medium speed till smooth- about 2 minutes. Add vanilla and eggs one at a time mixing well after each egg. In a separate bowl stir together flour, baking powder, oats, salt, and cinnamon. Slowly add the dry mix to the liquid mixture. Beat on medium speed for 1-2 minutes till well combined. Fold in dried fruit. Drop 1-2 teaspoons of dough about 2 inches apart on prepared cookie sheets.

Bake for 7-10 minutes. Remove from the oven and allow cookies to cool on the pan for 5 minutes. Carefully remove parchment paper from the cookie sheet and allow cookies to cool completely on the parchment. This is important since they are thin, fragile cookies. Repeat with the remaining cookie dough. Store cookies in a air tight container separated by paper towels or parchment. This dough also freezes well. Place scoops of dough on parchment and freeze. Once frozen place in a air tight container. Bake cookies when desired. Add a couple minutes to the cooking time for frozen dough. Enjoy! Inspired by Better Batter.
