Morning Glory Muffins
1/3 cup mashed ripe banana
3 eggs or 3 Flax eggs
maple syrup to taste (around 1/2 cup)
1 teaspoon vanilla
1 cup carrot
1 cup apple
2 cups almond flour
1 cup unsweetened coconut
2/3 cup chopped dates
2/3 cup raw cashews, chopped
2 teaspoons ground cinnamon
2 teaspoons ground cardamom
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon sea salt
Optional 2-3 tablespoons of gf all purpose flour (wont be 100% paleo but it lightens up the muffins a little)
Preheat oven to 350 and line a muffin tin. In a food processor chop carrots and apple (or you can shred them). Pour into a large bowl and mix with flax eggs, maple syrup, and vanilla. Stir in remaining ingredients and let sit for 10-15 min. Fill muffin tin and bake for 25-35 minutes.
*Flax eggs- mix 1 tablespoon ground flax with 2 1/2 tablespoons of water and let sit for 5 minutes to thicken. This equals one egg.
