Chicken Salad A La Orange
1 boneless chicken breast, cooked
2 tablespoons sliced almonds, toasted
2 tablespoons salad dressing
1 teaspoon lemon juice
1/2 teaspoon honey
Dash of salt
1/3 teaspoon curry powder
1/2 cup green seedless grapes
1 - 2 oranges
1/4 cup coconut, optional
Cube chicken and mix with salad dressing, lemon, honey and seasonings. Mix in grapes and chill. Microwave almonds in small dish, uncovered, for 1-2 minutes on High power(100%), stirring occasionally until lightly toasted. Slice off thin layer from one end of each orange. Cut almost through orange to form 8 wedges. Place orange on plate, separating each wedge to form a cup. Spoon chicken mixture into orange and garnish almonds and coconut
