Black & Blue Mini Fritattas

  • 6 eggs

  • 1/4 cup of milk

  • 3/4 cup shredded brisket

  • 1/2 cup chopped tomatoes

  • 1/4 cup chopped onion

  • 2 garlic cloves

  • 1/2 cup crumbled blue cheese (1tsp per frittata)

  • 1/4 cup gluten free bread crumbs

  • 2 tbsp melted dairy free or grass fed butter

  • Salt and Pepper


  • Preheat oven to 350 and grease 6-8 muffin cups. Whisk together eggs and milk with a pinch of salt and pepper. Sauté onion and garlic. Add tomatoes and allow them to cook through. 2-3 minutes. Stir in shredded brisket. Evenly divide brisket mixture in to prepared muffin cups. Add 1 tsp of blue cheese to each cup and pour eggs on top. Bake for 10 minutes. While baking mix together butter and bread crumbs. Evenly spoon on top of each frittata. Continue baking till eggs are set and tops are browned. Enjoy!
